I love when healthy food also tastes good. I dont know if anyone still does whole 30s, but its totally whole 30 compliant. Greek Chicken From Well Plated
So often, the Mediterranean diet gets difficult when you havent made it to the grocery store for fresh produce in a while, but this dish sidesteps that with plenty of pantry-to-plate ingredients: olives, roasted red peppers, red wine vinegar. All you need is a little fresh herbs for the garnish, and youll be set.
Slow Cooker Chicken Stifado

Chicken stifado is one of the most flavorful Greek dishes of all. The combo of cinnamon and orange compliments meat perfectly and make this dish homey and warm. The pearl onions are essential because they soak up all the flavor of the meat and spices. I do this stifado recipe with chicken breast because the traditional meat for this is rabbit, which is harder to find. The chicken breast is low in fat and cooks down to fork tender in the slow cooker. Traditional stifado usually requires much more care and way more steps than this version. The flavor, however, comes out the same. Youre going to need some good crusty bread because stifado creates an insanely good sauce to dip in.

Crockpot Mediterranean Chicken cooks low and slow in the crockpot to create an amazing dish packed with moist chicken thighs, olives, red peppers, onion, Italian spices, capers, and plenty of flavor. Serve it with some Mashed Cauliflower or Spinach Polenta for a restaurant worthy meal.
I forget how much I love olives some times. I think it all started with my Mom who loved eating toast with cream cheese and those little mini green pimento olives. We would steal bites as kids and I remember thinking it was equally delicious and disgusting. I couldn’t really decide if it was something I liked. Fast forward and now I will happily eat just about any type of olive. I love the salty brine and bite of a really good olive as much as I love the aforementioned jarred green olives with cream cheese. Go figure.

Favorite Mediterranean Diet Recipes
Once again, The Mediterranean Diet has been named the overall diet of the year. This list of 50 breakfast, lunch, and dinner recipes makes it easy to add more of the Med-inspired lifestyle to your weekly meal plan.
Just as we were setting our sights on eating better with the New Year, US News and World Report came out with their standings of the best diets to follow for 2021, and for the fourth consecutive year, the Mediterranean Diet was named the best overall diet. In 2019, CNN reported the Mediterranean Diet came out on top due to: how easy it is to follow, its nutritional completeness, its ability to produce short-term and long-term weight loss, its safety and its potential for preventing and managing diabetes and heart disease.
Unlike many of the trendy, silver bullet diets that are at the bottom of this years list and you see everyone jumping through hoops to try , the Mediterranean diet is a centuries-old lifestyle for long-term health and wellness instead of a quick weight loss fad that never seems to really last.
Slow Cooker Beef Stew With Eggplant Zucchini And Tomatoes
In the original version of this recipe, it needed to simmer on the stovetop for 45 minutes. Instead of tending to the stovetop, you put this on in the morning and go about your day. When you get home, you have a delicious tender beef stew waiting for you. The beef becomes spoon-tender. Yes, I said spoon-tender, not fork-tender.

Slow Cooker Moroccan Chickpea Stew With Couscous
This is my favorite slow cooker recipe to date! Throw this on in the morning and let it cook while youre at work. This chickpea stew is absolutely loaded with flavor! The spices add layer after layer of flavor, without being overpowering. The onions and garlic just melt away after 6 hours in the slow cooker. A good amount of extra virgin olive oil, a half cup to be exact, really brings all of the flavors together and give a richness that this vegetarian recipe deserves! Not to mention, what is a Mediterranean recipe without an excessive amount of olive oil!
The Mediterranean Diet Is One Of The Most Attractive And Popular Diets In The World
The Mediterranean diet is effective in terms of eating healthy and losing weight. The food also prevents many diseases like heart attacks, strokes, untimely death, and diabetes. If anyone is on a Mediterranean diet, then it is significant to follow the underlying philosophies and rudiments of this diet.

I prefer my beef stew to be rich, with just enough flavorful, concentrated braising liquid to make a luxurious stew. If you prefer your stew to have a thicker gravy, follow the directions in the recipe below.
If you want to make our healthy beef stew recipe but dont have a slow cooker, simply place the ingredients into a heavy pot or casserole dish, cover very tightly with foil, and bake in a 275 degree oven for 3-4 hours. Youll get the same delicious results with this slow oven braise as you will from a slow cooker.
I hope you enjoy our delicious Mediterranean beef stew recipe! Cheers!
Side Dishes For Slow Cooker Mediterranean Chicken
There are so many different side dish options for this chicken but no matter what you choose, you will want something that can soak up the sauce.
- Reach for some orzo or couscous to stay in the Mediterranean theme.
- For something heartier with more whole grains, try some quinoa or farro.
- For a low carb option, gran some spaghetti squash or zucchini noodles. Cauliflower rice works great as well.
- This can easily become a pasta dish with some cooked pasta. We also love it with egg noodles.

Here are some of the products I used when making this recipe.
- Slow Cooker: There are so many different slow cookers on the market but I personally use this one that allows me to brown, sear, or saute in the same pan. Plus I find the cooking temperature to be really even and consistent.
- Olives: As I mentioned, my favorite olives for this recipe are green Castelvetrano olives. Usually I buy mine from the olive bar a our local grocery store or order them online, which is usually more affordable.
- Peppers: As I mentioned you can use roasted red peppers or sweeter peppadew peppers for this recipe. Both turn out delicious. Fresh peppers will also work but the flavor won’t be as intense since they haven’t been roasted beforehand. If you like heat, you could also use the spicy peppadew peppers for this recipe.

Slow Cooker Chicken Cacciatore

If you’re not already familiar with this Italian classic, now’s your chance to give it a taste. Prep this recipe before work and eight hours later, you’ll have a tender chicken dish waiting for you.
Totaling under 300 calories per serving with 20 grams of protein, 8 grams of carbs and 21 grams of fat, this recipe calls for olive oil, a Mediterranean diet staple.
Healthy, natural fats are easy to incorporate into any meal and can give your dish a heart-healthy boost. Olive oil is a form of monounsaturated fat, which can help lower your risk of heart disease and may help lower HDL cholesterol levels, according to the Mayo Clinic.
At only 158 calories per cup-and-a-half serving, this asparagus soup makes the perfect appetizer and can be enjoyed either warm or chilled. You only need to devote about 13 minutes of prep time and can let this soup simmer in your slow cooker for about eight hours on a medium temperature.

Green Beans With Pork And Potatoes
Spend 20 minutes in the morning prepping dinner, throw it into your slow cooker, set the timer and youre good to go. This is a super-fast and tasty way to get two servings of veggies per bowlful and satisfy the hungry meat eater. The green beans are cooked to perfection and the meat is tender and full of flavor.
How To Start The Mediterranean Diet Plan
Unlike other diet plans, the Mediterranean Diet doesnt prescribe prohibitive restrictions or eliminations. Its more inclusive, more even-keeled, and one I can actually adopt and follow without feeling like Im missing out on all the good foods and flavors.
The diet is more about portion control, balance, and making good choices in eating more real good real food. The main guidelines of what you eat can easily be modified for vegetarian and vegan lifestyles, and I find the ingredients and philosophy incredibly easy to adopt into my daily eating:
- Eat more: Vegetables and leafy greens, fruits, nuts, whole grains, dairy , beans and legumes, olive oil and healthy fats, seafood, poultry, eggs, herbs and spices, and even wine
- Eat less: Red meat
- Avoid: Processed foods, added sugars , refined grains , anything labeled low-fat or diet or with ingredients you cant read
Greek Slow Cooker Pasta Sauce With Chicken
This is a traditional Greek dish that is savory and warms you right up. Of course, it isnt traditionally made this way, but for the ease and foolproof fork-tender meat, Im using a slow cooker. This is one of those Greek comfort foods I can imagine myself eating in a small taverna high up in the mountains of Central Greece with the smell of wood fires burning and slow-cooked meats stewing.
Mediterranean Pork With Couscous
Tender pork marries well with a variety of fragrant spices and couscous in Mels Kitchen Cafes recipe. Because the Mediterranean Diet encourages whole grains, we suggest serving this dish with whole-wheat couscous. Start this recipe in the morning before you head to work, and youll come home to a lovely smelling kitchen and a ready-made dinner.
Ingredients:
- 1 teaspoon basil
- 1 to 2 cups couscous, prepared according to package directions
Directions: In a liquid measuring cup, combine the oil, broth and spices. Cut small slits with a paring knife into the pork roast. Place the pork in a 4-quart slow cooker and pour the broth/spice mixture over the top of the pork. Cover the slow cooker and cook on low for 7 to 8 hours until the pork is tender. Remove the pork from the slow cooker and shred into pieces. Return the shredded pork to the slow cooker and toss with the juices/liquid. Serve the meat/juices over couscous.
